Indeed, the conveniently placed "Sort by" button has been removed from the Mail interface with macOS 11 Big Sur.
I know: "Why did they do that?"
The somewhat good news is that the functionality is still there but you have to click on the “View” menu and choose 'Sort By'.
Alternatively, you could also activate the Column Layout and get the ability to sort emails directly by clicking on the header of the desired column.
Unfortunately, the Column Layout doesn't offer the possibility to see the first few lines from the email body, which the normal view does.
